Recipe – Sweet Potato Pie: Keeps Them Coming Home for the Holidays

timthumbI thought I should share this recipe. Just in case you are still trying to find a great side dish for Christmas dinner or something interesting to bring to the family gathering, you should try this.

Ingredients:

6 medium sweet potatoes
1/3 cup butter
3/4 cup brown sugar
1/2 cup milk
2 eggs
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 (9 inch) unbaked pie crust (small not the deep dish version)
Optional (mix 1 1/2 cups of pecans with 1 Tbsp butter and 2 Tbs brown sugar and microwave for 1 minute). Add to top of pie before baking.

Directions:

Boil sweet potato whole in skin for 40 minutes, or until done. Run cold water over the sweet potato, and remove the skin. Scoop potato into your mixing bowl.
Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust. Add pecan mixture to top of pie.
Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.
